Symptoms of Gluten withdrawal?

I started eating Gluten, Soy, and dairy free about a month and 3 weeks ago. I've been eating a very nutritional and balanced diet since with none of the above... I've been very strict too. I also take vitamins regularly. About 2-3 days after I started the diet I started getting heart palpitations, fatigue, anger, irritability, etc. Why haven't these stopped by now? It's been almost 2 months. The heart palpitations after I eat are very disturbing! The only thing it could be is: Diet Mountain Dew(2 cans a day), Zurtec, Zoloft.

If anyone has any thoughts please let me know.

If you cut out foods that you react to you often become VERY hypersensitive to traces of those products. This hypersensitivity can last some time.

If you are still eating processed foods it may be that traces of these products are present and setting off your symptoms. If so start preparing all your food from scratch and see if that makes a difference. Did you cut gluten, soy & dairy out on expert advice??

It may also be that you react to other grains which you have substituted or that you have a bad reaction to artificial sweeteners in your drinks that the other products have masked.

I'd suggest going back to the basics, eating very simply and keeping a food diary, which is what I do if my symptoms recur.

Have you checked the vitamins for those ingredients?
I'd cut out the diet Mountain Dew. Those could be nutrasweet/splenda reactions.
I second the idea of a food diary.
Also if symptoms got worse, what are you eating more of now that you weren't before?
